Instructions: pour 8kg of sugar into 8 litres of hot water and stir until you are sure all the sugar has dissolved. Top up to 25 litres with cold water and stir for 30 seconds. Make sure the temperature is below 30deg C then add the sachet of yeast. Stir for 1 minute.
For maximum alcohol and best quality ferment for 10 – 14 days at between 19 – 23degC air temperature.
For maximum speed ferment for 5 days at between 24 – 27degC.
Yeast can die above 27degC air temperature.
